It’s been a while since I’ve added any recipes or food ideas to the blog, so I thought this week would be a great week to catch you guys up on some of the eats around Casa de Blundell.
No thanks to some of her new meds, Laurie wasn’t feeling too interested in eating anything but crackers and cereal last week, so I took the opportunity to try a couple ideas that had been rolling around in my head recently.
I recently found, thekitchn.com and a couple posts related to fried eggs stirred my imagination.
We LOVE the Royal Red Robin burger at Red Robin (with the fried egg on top), so I’ve been trying some other unique ways to eat fried eggs as well.
Last week I had fried egg on toast, fried egg sandwich with turkey, fried egg with salsa and fried egg on a pizza.
A pizza?!
Yup! A pizza.
A fried egg on a pizza?
Yup! Well…. close.
You don’t actually fry the egg, you just break it open and pour the contents on top of the pizza before you put it in the oven. It turns out to be quite a unique experience.
I started with a frozen chicken pizza from California Pizza Kitchen (from Costco).
Added some chopped turkey sandwich meat, green onions, salad peppers and bacon. Then poured the content of three eggs on top of the pizza.
I cooked the pizza on a stone baking pan as I normally would have and the eggs cooked right on top.
I would note however, that I’d recommend cooking the pizza on the top shelf of your oven. I started out on the bottom shelf and the egg didn’t seem to cook at all for the first 10 minutes. After I moved pizza up top, the eggs cooked nicely (however requiring a bit more time in the oven for the pizza than usual).
In my opinion, the pizza came out great in the end. The egg just melts all the flavors together and gives you a great excuse to pull out and eat your pizza with a fork and knife.
But don’t just take my word for it. Try it for yourself.

It’s nice to see that pizza makers are starting to get innovative. Try Sal’s Pizza as well. Go for a brand that uses quality ingredients.
