I&#8217;m the odd one that actually enjoyed salisbury steak from the school cafeteria. It was one of the top cafeteria meals, alongside the rectangular slices of pizza and the giant fried burritos.<br \/>\n<!--more--><br \/>\n<a href=\"http:\/\/www.casadeblundell.com\/jonathan\/flickr\/photo\/3821035234\/1988.html\" class=\"tt-flickr tt-flickr-Medium\" title=\"1988\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm3.static.flickr.com\/2623\/3821035234_cc71672387.jpg\" alt=\"1988\" width=\"225\" height=\"320\" \/><\/a><br \/>\n(not an <em>actual<\/em> photo from 1988&#8230;)<\/p>\n<p>But I digress, let&#8217;s get to that recipe.<\/p>\n<p>To start off with, I combined 1\/3 cup of bread crumbs with an egg and mixed the two together.<\/p>\n<p><a href=\"http:\/\/www.casadeblundell.com\/jonathan\/flickr\/photo\/4145183765\/salisbury-steak.html\" class=\"tt-flickr tt-flickr-Medium\" title=\"Salisbury Steak\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm3.static.flickr.com\/2468\/4145183765_9b58c582f3.jpg\" alt=\"Salisbury Steak\" width=\"500\" height=\"333\" \/><\/a> <\/p>\n<p>My reference recipe called for 1 medium onion, thinly chopped. We were out of onion at the time, so I opted for 1\/3 cup of dried chopped onions instead.<\/p>\n<p>I also added 1\/3 cup of beef broth to the mixture and gave it all a good mixing. <\/p>\n<p>The end result looked a lot like oatmeal.<\/p>\n<p><a href=\"http:\/\/www.casadeblundell.com\/jonathan\/flickr\/photo\/4145947174\/salisbury-steak.html\" class=\"tt-flickr tt-flickr-Medium\" title=\"Salisbury Steak\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm3.static.flickr.com\/2721\/4145947174_a57897507d.jpg\" alt=\"Salisbury Steak\" width=\"500\" height=\"333\" \/><\/a> <\/p>\n<p>And of course, if you know anything about my cooking, you&#8217;ll know I can&#8217;t cook much of anything without adding some of my &#8220;secret ingredient,&#8221; Tony Chachere&#8217;s.<\/p>\n<p><a href=\"http:\/\/www.casadeblundell.com\/jonathan\/flickr\/photo\/4145945308\/salisbury-steak.html\" class=\"tt-flickr tt-flickr-Medium\" title=\"Salisbury Steak\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm3.static.flickr.com\/2491\/4145945308_8fa1b245bb.jpg\" alt=\"Salisbury Steak\" width=\"500\" height=\"333\" \/><\/a> <\/p>\n<p>You can always add a dash or two or three to any dish to spice it up a bit.<\/p>\n<p>Next, I froze my hands off mixing the meat in that was (mostly) thawed out in the microwave.<\/p>\n<p><a href=\"http:\/\/www.casadeblundell.com\/jonathan\/flickr\/photo\/4145188731\/salisbury-steak.html\" class=\"tt-flickr tt-flickr-Medium\" title=\"Salisbury Steak\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm3.static.flickr.com\/2750\/4145188731_65ca1aab0b.jpg\" alt=\"Salisbury Steak\" width=\"500\" height=\"333\" \/><\/a> <\/p>\n<p>I used a package of ground turkey, roughly 1 1\/2 pounds.<\/p>\n<p>Once the meat was mixed with the other ingredients (bread crumbs, onions, and beef broth) I formed several oval shaped patties with the meat. Depending on the size, we can usually make 4-6 patties from 1 1\/2 pounds of meat.<\/p>\n<p><a href=\"http:\/\/www.casadeblundell.com\/jonathan\/flickr\/photo\/4145950372\/salisbury-steak.html\" class=\"tt-flickr tt-flickr-Medium\" title=\"Salisbury Steak\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm3.static.flickr.com\/2540\/4145950372_5546abd466.jpg\" alt=\"Salisbury Steak\" width=\"333\" height=\"500\" \/><\/a> <\/p>\n<p>Of course, what&#8217;s salisbury steak without great gravy.<\/p>\n<p>I went with a cream of mushroom option, mixing a can of cream of mushroom with 1\/4 cup of beef broth. Simply mix the two together and give them a good mixing.<\/p>\n<p><a href=\"http:\/\/www.casadeblundell.com\/jonathan\/flickr\/photo\/4145191613\/salisbury-steak.html\" class=\"tt-flickr tt-flickr-Medium\" title=\"Salisbury Steak\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm3.static.flickr.com\/2509\/4145191613_e3c271d2be.jpg\" alt=\"Salisbury Steak\" width=\"500\" height=\"333\" \/><\/a> <\/p>\n<p>Finally cover the meat patties with the gravy and cover it all with aluminum foil and pop &#8217;em in the oven. <\/p>\n<p><a href=\"http:\/\/www.casadeblundell.com\/jonathan\/flickr\/photo\/4145192977\/salisbury-steak.html\" class=\"tt-flickr tt-flickr-Medium\" title=\"Salisbury Steak\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm3.static.flickr.com\/2682\/4145192977_f54697fbc3.jpg\" alt=\"Salisbury Steak\" width=\"333\" height=\"500\" \/><\/a> <\/p>\n<p>Cook at 350 degrees for 45 minutes, remove the foil and then cook for another 15 minutes.<\/p>\n<p>An hour later &#8212; you&#8217;ve got the poor man&#8217;s steak.<\/p>\n<p><a href=\"http:\/\/www.casadeblundell.com\/jonathan\/flickr\/photo\/4146195990\/salisbury-steak.html\" class=\"tt-flickr tt-flickr-Medium\" title=\"Salisbury steak\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm3.static.flickr.com\/2600\/4146195990_da91ef636b.jpg\" alt=\"Salisbury steak\" width=\"333\" height=\"500\" \/><\/a> <\/p>\n<p>I pulled out some leftover green bean casserole that Laurie made for Thanksgiving and ended up with one those great comforting meals on Sunday night &#8212; and leftovers for lunch. Excellent!<\/p>\n<p><a href=\"http:\/\/www.casadeblundell.com\/jonathan\/flickr\/photo\/4145437239\/salisbury-steak.html\" class=\"tt-flickr tt-flickr-Medium\" title=\"Salisbury steak\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm3.static.flickr.com\/2804\/4145437239_345cacf5eb.jpg\" alt=\"Salisbury steak\" width=\"500\" height=\"333\" \/><\/a> <\/p>\n<p><strong>So what about you? What was one of your favorite cafeteria meals growing up?<\/strong><\/p>\n<h2>Recipe:<\/h2>\n<p>1 1\/2 pound of ground beef\/turkey<br \/>\n1\/3 cup dried, chopped onion<br \/>\n1\/3 cup of bread crumbs<br \/>\n1 egg<br \/>\n1\/4 beef broth<\/p>\n<p>Pre-heat oven to 350 degrees.<br \/>\nCombine onion, bread crumbs, egg and 1\/4 cup of beef broth. Mix it all together.<br \/>\nAdd the meat and mix it in with the other ingredients.<br \/>\nMake the meat into oval patties.
